Hired by the Director of Foodservice to assist in writing new RFP’s to obtain bids from healthier food vendors, FK Restaurants toured each of the 123 schools to assist in identifying kitchen code violations and to assess “cook from scratch” capabilities. We worked with existing vendors to source more healthful products and created healthier menu items. We then helped launch new Breakfast in the Schools and Afterschool Snack programs, essentially serving 40,000 more meals each day.
To better recommend controls over the nearly $30 million cost of the food program, FK Restaurants conducted a thorough financial analysis for DCPS. Finally, FK was responsible for networking with local farmers to bring fresh fruit into the schools. We also fast-tracked gardens into the school program and created special Chefs in the Schools days to demonstrate cooking techniques to students and their families.
